Easy Crock Pot Mac & Cheese

I was cruising through Facebook one night last week and I came across this recipe for Easy Crock Pot Mac & Cheese so I saved the link for later.  A few days later I was trying to figure out what to make for dinner because we had a bit of a crazy schedule so I wanted something to basically set and forget.  I came across this recipe.  Not only would it be simple to make and let it cook it’s own but a lot less dishes to clean up after.

After raiding the fridge and the pantry to see what I did have and what I needed, off to the store I went to get the last remaining items along with a few other things.

I followed the recipe but however, with my crew, a lot of times it’s a double batch kind of deal.  After I put the first part in for the hour the cream cheese was still not melted.  That’s when it dawned I should have cubed it.  I let it go another half hour but still stirring it up from time to time.

Next came time for the macaroni and I put it in and mixed.  Set it and forgot it.  I then dropped my middle son off at scouts and then run to the drug store to get hubby’s script filled.  Came home and it was done.  The macaroni’s were not as done as I would have liked it, but the hubby and the twins ate.  I unplugged the crock pot and then left to get my son from scouts and back to the drug store to pick up the script.

Once home I couldn’t wait to dive into this delicious dish.  To my surprise just setting in the cooker that amount of time unplugged there was still enough heat left and that to finish cooking the macaroni to how I like it.  Let me tell you this was delicious!  Such a rich creamy texture I immediately realized I probably shouldn’t have made a double batch but this would also taste good with some sort of meat in it as well.
