Hedgehog’s Yellow Cake

My daughter came home from school one day and she was telling me about the cake recipe she found in her school book.  I told her to bring her book home and we can try the recipe.

Well she brought it home during the week and of course the book had to be back in school the next day.  So I didn’t get a change to write it down but instead I did the next best thing is this day and age of technology, I took a picture of it.  Sorry it’s not the greatest.

So, that weekend we decided to make the cake.  I must say.  I thought it was way to simple.

She helped me with all the ingredients, mixing it, and pouring it into the pan.  Well I couldn’t find my pan that was about that size so instead I used my brownie pan that has the bottom that lifts up and away from the sides.

Here is what we got:

Well, silly me couldn’t figure out what was wrong.  However, it tasted great and I was thinking with some fresh fruit or jam it would be awesome!

A few days later I was getting ready to take the pictures off the camera when I happened to re-read the ingredients.  It states:

“1 1/4 cups self rising flour”

Then it dawned on me.  I didn’t use self rising flour but instead used regular flour.  DUH!!

So with that a lesson was learned however, we had a different out come then expected but regardless of it all, I must say it was still an amazing cake!
