Pumpkin Muffins aka Spiced Pumpkin Muffins

Now we have all seen the Pumpkin Muffin recipe that has been going around social media, especially during the fall:

Well, to me it looked really easy and I just had to try it.  Especially after I seen this one which was the same thing but just a different type of cake mix:

Well, my little hometown store carries only the basics sometimes and sometimes its hard to find what you need here so I was happy when I found a can of pumpkin filling.  So I went into the baking isle and got me a box of yellow cake mix as they did not have the spiced.

Came home, started to mix everything together, only to realize that the can of pumpkin filling I had was not the regular sized can but the large can.  Meaning, I had to go back to the store to get yet another box of cake mix.  No biggie, more muffins!

I proceeded to come home, mix it all again, and line my muffin tins with the muffin liners (less mess you know), and I threw them in the oven.   After 20 minutes, they were not near to be done at all.  Another 5 minutes later still.  I ended up leaving them in for about 35 minutes total.

I then took them out and let them cool completely.  However, the baker in me couldn’t wait to try them so they were a bit warm.  Let me tell you what, they were AWESOME!  They are a very moist muffin.  To me all that was left was possibly was trying to figure out how to get the pumpkin roll cream cheese mixture in the center as it was like a mini pumpkin roll in your mouth.

So with that I will leave you with your taste buds watering and eager to try and possibly dare to do something different with them.  You know I will!
